Pesto pasta with sun-dried tomatoes

The Italians have been pounding basil with garlic and tumbling it through pasta for hundreds of years. We bow down to them for doing the hard yards on this recipe, and then again to our kitchen for making a version that’s ready in minutes and unashamedly delicious (if we do say so ourselves). Ours uses casarecce, a short, twisted pasta that’s perfect for carrying a vibrant green sauce. Said sauce is a riff on our creamy pesto, loaded with fresh basil, Parmesan and garlic, plus a hit of baby spinach and kale for extra oomph. A dash of crème fraîche rounds it out, making for a brilliant dinner for one. Pronto.
